Spiced Apple Pecan Pudding Cake is a recipe that my Nana would make for me on a minutes notice. I loved how the kitchen would smell like the holidays while it was baking. It is quick and easy to put together in just one bowl; you can have a hot dessert ready within an hour. It is also perfect for breakfast or an after school snack.
This pudding cake is not too sweet and has the lovely tart apples to give it a nice tang. The wonderful mix of cinnamon, nutmeg, pumpkin pie spice and vanilla is the perfect combination for tons of fall flavor. The pecans give it a nice crunch. This dessert will quickly become a family favorite anytime of the year. Try it with a dollop of whip cream and a hot cup of tea, hot cocoa or coffee.
My Nana would make this dessert for everyone she knew and as a gift for any occasion. - 1 cup sugar
- ¾ cup light brown sugar, packed
- ¾ teaspoon nutmeg
- 1 ½ teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- 1 ¾ cup flour
- 1 ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons melted butter
- 1 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla
- 2 ¼ cups cored, peeled and diced Granny Smith apples (about 2 medium)
- 1 cup chopped pecans
- Preheat oven to 350°
- Mix together sugar, brown sugar, nutmeg, cinnamon, pumpkin pie spice, flour, baking soda and salt.
- Stir in butter, vegetable oil, eggs, and vanilla.
- Mix in apples and pecans, just until combined.
- Pour into a greased 8”x8” pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
