Am I the only one who feels like a Superhero when it comes to rescuing people who need dessert? Gosh I hope not! Anyway, here is my story.
It was a Cool Winter’s Eve when the phone rang and it was Patrice (the name has been changed to protect the innocent) on the line. I immediately noticed that she must be sick because she was coughing something terrible (great detective work, right?) We were supposed to drive together to a class in the suburbs to hone our skills (ok, it was baking skills). Patrice quickly whispered that she wasn’t going to be able to make it (reminder to self, prepare Split Pea Soup and take it over to her later). She wanted to ask if I could bring a dessert for her (lesson learned…that’s the last time I share with anyone about my secret cake stash). It was her turn to take something to class and she had completely forgotten. Ta da da da Superhero Baker (my alter ego) to the rescue (reminder to self, come up with a cooler name). So, I’m off to conquer hunger pains everywhere (ok, back to reality)! And that, my friends, is why I keep Pink Velvet Berry Save the Day Cake ingredients around the house at all times. It is just 4 simple pantry items consisting of: a box of cake mix, a can of pie filling, some crushed pineapple and butter. I mean, even Crusader’s need to take short cuts every once in awhile, right?
This is the easiest, quickest, and tastiest cake there is. You literally dump the ingredients in a pan, and 45 minutes later you are ready to roll. Hot from the oven you have an incredibly fruity cake cobbler that melts in your mouth. Everybody will rave about the crunchy, yummy dessert and it’s almost embarrassing to tell them how to make it when they ask. Oh, and they will ask.
So that was my latest escapade my friends. Now you know that my sidekick is a darling sweet pink cake with a tart and tangy berry-pineapple combination bubbling underneath. I promise you one day that you’ll be calling it the “Pink Velvet Berry Save The Day Cake”. Now on to my next culinary adventure teaming up with Batman…well, a Superhero Baker can dream, can’t she?
- 1 can (21 oz) Mixed Berry Pie Filling
- 1 can (15 oz) Crushed Pineapple
- 1 box (about 18 oz) Pink Velvet Cake Mix
- 1½ sticks butter, melted
- Whipped Cream, if desired
- Dump mixed berry pie filling and crushed pineapple into a 9 x 13 baking dish. Stir together.
- Sprinkle cake mix over the top of the fruit. Pour butter evenly over the entire surface of the cake mix.
- Bake at 350°F for 45 minutes to 1 hour until nice and brown on top.
- Serve immediately with a dollop of whip cream on top.
